When the coconut tree is tapped, it produces a highly nutrient-rich sap that exudes from the coconut blooms. This sap is very low glycemic (GI index of only 35) is an abundant source of amino acids, minerals, vitamin C, broad-spectrum B vitamins and has a nearly neutral ph.

Small batches ensure that our pure nectar is minimally process with just a small amount of water removed.

Some Agave syrups are hydrolyzed at temps up to 140 degrees F. for 36 hours; the end product containing 90% fructose compared to the coconut sap which is only 0.5 percent fructose, 16% sucrose and 82% inulin. This product can be used anywhere sweeteners or syrups are used.
