When the coconut tree is tapped, it produces a highly nutrient-rich sap that exudes from the coconut blooms. This sap is very low glycemic (GI index of only 35) is an abundant source of amino acids, minerals, vitamin C, broad-spectrum B vitamins and has a nearly neutral ph.

Small batches ensure that our pure coconut crystals is minimally process with just a small amount of moisture removed which allows for crystallization. Most brown sugars are boiled at temps of 220 degrees F. with the end product containing 93 % sucrose compared to Coconut Crystal which is only 16%  sucrose.
